For a pitcher

½ cucumber, sliced, ½ lemon, and a few basil leaves, to a pitcher of filtered water.

The method

  1. Add the fruit, herbs or citrus to a pitcher of filtered water. Press or clap herbs between your palms first to wake up their oils.
  2. Chill at least 1–2 hours, or overnight, so the flavors bloom.
  3. Sip through the day, topping up the water once or twice before the fruit tires out.

Make it an electrolyte water

A pinch of good sea salt and a squeeze of citrus turns this into a gentle electrolyte water, kind on a hot day or after a workout. For a fuller version, see Gina’s Natural Electrolyte Lemonade.

Keeps: about 2 days cold. Pull the citrus or cucumber peel after a day so it doesn’t turn bitter.
