Rosemary Garlic Lamb Chops

Lamb is a wonderful choice for special dinners and is a traditional part of Mediterranean cuisine. A simple marinade lets the flavor of the lamb shine.
Prep-ahead: marinate first with the herb & garlic marinade — it keeps two weeks in the fridge.

Ingredients
- 8 lamb loin chops
- 3 tablespoons extra virgin olive oil
- 3 garlic cloves, minced
- 1 tablespoon chopped fresh rosemary
- Zest and juice of 1 lemon
- 1 teaspoon Dijon mustard
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
Method
- Whisk together the olive oil, garlic, rosemary, lemon zest, juice, Dijon, salt and pepper.
- Marinate the lamb 30 minutes to 4 hours.
- Heat a grill or grill pan over medium-high heat.
- Cook the chops 3–4 minutes per side for medium-rare, or longer to your liking.
- Let rest 5 minutes before serving.
No grill? Sear in a hot cast-iron pan, a couple of minutes per side, or broil close to the heat.
Gina's tip
Pair with roasted beets, sautéed broccoli rabe and a dollop of tzatziki.
Coach's Note
Lamb feels like an occasion, but it's one of the simplest things to cook. Don't save it only for holidays.
