Dijon Herb Salmon

Simple, elegant, and one of those recipes you'll come back to all year. Dijon, fresh herbs and lemon create a light crust that keeps the salmon moist while adding incredible flavor.

Ingredients
- 4 (6-ounce) salmon fillets
- 2 tablespoons Dijon mustard
- 2 tablespoons extra virgin olive oil
- Juice and zest of 1 lemon
- 2 cloves garlic, minced
- 2 tablespoons chopped fresh parsley
- 1 tablespoon chopped fresh dill
- 1 teaspoon chopped fresh thyme
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper
Method
- Preheat the oven to 400°F.
- Whisk together the Dijon, olive oil, lemon juice, zest, garlic, herbs, salt and pepper.
- Place the salmon on a parchment-lined baking sheet and spread the Dijon mixture evenly over each fillet.
- Bake for 12–15 minutes, until the salmon flakes easily.
- Finish with a squeeze of fresh lemon.
