Simple, elegant, and one of those recipes you'll come back to all year. Dijon, fresh herbs and lemon create a light crust that keeps the salmon moist while adding incredible flavor.

Ingredients

  • 4 (6-ounce) salmon fillets
  • 2 tablespoons Dijon mustard
  • 2 tablespoons extra virgin olive oil
  • Juice and zest of 1 lemon
  • 2 cloves garlic, minced
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon chopped fresh dill
  • 1 teaspoon chopped fresh thyme
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper

Method

  1. Preheat the oven to 400°F.
  2. Whisk together the Dijon, olive oil, lemon juice, zest, garlic, herbs, salt and pepper.
  3. Place the salmon on a parchment-lined baking sheet and spread the Dijon mixture evenly over each fillet.
  4. Bake for 12–15 minutes, until the salmon flakes easily.
  5. Finish with a squeeze of fresh lemon.
