Farro is one of my favorite grains. It has a slightly nutty flavor and a wonderful chewy texture that makes any bowl more satisfying.

Ingredients

  • 1 cup pearled farro
  • 3 cups low-sodium vegetable broth
  • 1 bay leaf
  • Pinch of sea salt

Method

  1. Rinse the farro well.
  2. Bring broth, bay leaf, and salt to a boil.
  3. Stir in farro.
  4. Reduce heat, cover, and simmer for 25–30 minutes until tender.
  5. Drain any excess liquid and remove the bay leaf.

Storage: Keeps for 5 days in the refrigerator.

Gina's tip

Use broth instead of water for extra flavor.

Coach's Note

Cook the grain once, eat it three ways. A pot of farro on Sunday is the foundation half your lunches are built on.
