Quinoa is one of those ingredients that quietly fits into almost everything. I love making a batch on Sunday to use throughout the week.

Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 teaspoon olive oil

Method

  1. Rinse quinoa thoroughly.
  2. Combine broth, quinoa, and olive oil.
  3. Bring to a boil.
  4. Cover and simmer for 15 minutes.
  5. Remove from heat and let stand for 5 minutes.
  6. Fluff with a fork.

Storage: Keeps for 5 days in the refrigerator.

Stir in fresh parsley before serving for a little extra freshness.
