Pineapple Ginger Refresher
From The Kitchen
Tropical and zingy — sweet pineapple, a warm kick of ginger, and a squeeze of lime to pull it all together.
Scale
Ingredients
- 2 cups fresh pineapple, cubed
- 1-inch piece fresh ginger
- Juice of ½ lime
Method
- Run the pineapple and ginger through a juicer.
- Stir in the lime juice.
- Serve over plenty of ice. No juicer? Blend everything with ½ cup water, then strain through a fine-mesh sieve or nut-milk bag.
Storage: Best fresh. Keeps 24 hours in a sealed jar filled to the top.
Serve it with
- A midday refresher
- After a workout
- With a light lunch
Stretch it with water
A splash of filtered water — or more — makes the juice go further and lightens the sugar in every glass. It's a gentle option if you're sensitive to sugar or simply looking to cut back. Start with about one part water to three parts juice, then adjust to your taste.
Gina's tip
Ginger adds a gentle heat and settles the stomach — start with a little, you can always add more.
Coach's Note
A bright, zingy drink can be a small lift in the middle of a long day. No occasion needed — just something good.
I hope this recipe finds a place in your kitchen as it has in mine. Enjoy!
