Fresh Garlic vs. Garlic Powder

The short answer

Fresh garlic is bright, sharp and alive; garlic powder is mellow and even. They're not substitutes so much as different tools — fresh for cooking, powder for rubs, dressings and spice blends.

When to use fresh

Anytime garlic is a main flavor and it's going to cook — sautés, sauces, roasts. Fresh gives that unmistakable pungency.

When powder wins

Powder distributes evenly and won't burn, which makes it ideal for dry rubs, marinades and spice mixes where you want garlic flavor without raw bite or hot spots.
